Tenderloin is a muscle that barely works, which is why filet is so tender and also why it has little marbling, so you're paying for texture more than beefy flavour.

Because it's lean, it dries out fast. Order it a step rarer than you'd order a rib-eye. Medium-rare is the ceiling. Past medium, the cut stops being worth its price.

A rib-eye comes from the upper rib section and includes the spinalis, the curved cap of meat around the top edge, which I'd argue is the best bite on any steak. Its marbling needs heat to melt. Medium-rare is right. Rare leaves the fat waxy.

Mashed potatoes and green beans come with it, for 1,360 calories in all. Milk is the only allergen.

Steak Diane isn't a Cheesecake Factory invention. It's a 1950s hotel dining-room dish, flambéed at the table in butter, brandy and cream while you watched. The theatre is gone here. The dish survived.

What you get is medallions under a mushroom and wine sauce with mashed potatoes, 76 grams of protein for 1,150 calories. Only the Grilled Rib-Eye carries more protein, and it costs 210 extra calories to get there.

Of the five steaks on this menu, this is the one I'd skip. It's the highest in calories at 1,490 and the lowest in protein at 55 grams, which is the wrong end of both. The Grilled Rib-Eye gives you 86 grams of protein for 1,360 calories. The Filet gives you 67 grams for 840.

The reason is the fries. 121 grams of carbohydrate sit on that plate, and they're most of what you're paying for.

None of which makes it a bad dish — a thin steak with a pile of proper fries and herb butter is a legitimate thing to want, and if that's the craving then nothing else here scratches it. Milk is the only allergen, as with every steak here. Sodium runs 2,810 mg.
