When booking actually matters

On a weekday, walking in is usually fine the dining rooms are large and turnover is quick. The picture changes at three moments: Friday and Saturday evening, weekend brunch, and any holiday that people mark with a meal out. Those are the slots where a reservation is the difference between sitting down and standing at the host stand.
